Buffet Basics
• Dishes with their appropriate serving utensils
should be arranged on the buffet table in the
same order that you would serve them at a
sit-down meal.
• Proper placement of wicked chafing fuel
under the water pan is very important for
optimal results. Make sure that only the tip
of the flame touches the water pan to utilize
the hottest part of the flame.
• To help mitigate foodborne illness, ensure
buffets are monitored by serving staff. If
any food is improperly handled by guests,
remove it immediately. Do not replenish food,
replace it.
